The purée contains 90% raspberry pulp and 10% cane sugar.
This purée combines two raspberry varieties, Willamette and Mecker, to achieve an intense yet well-balanced flavour. Willamette raspberries have a slightly tangy aroma with a high Brix value, while Mecker raspberries complement the purée with a rich, full taste.
The seeds are removed from both varieties, leaving only pure pulp.
Raspberries are a versatile fruit in pastry making and pair wonderfully with coconut, passion fruit or yuzu.
