Almond flour, made from finely ground and blanched (peeled) almonds, is primarily intended for baking macarons. It can also be used to soften cake bases, Linzer dough, as well as in pancakes or bread. It is suitable for baking vegan and gluten-free cookies or pastries. It can be consumed without cooking, thus it can also be used in raw desserts.
