Locust bean gum is a fibre soluble in hot water, found in the seeds of the carob tree (Ceratonia siliqua), which is cultivated in the Mediterranean region. It stabilises emulsions, is used as a thickener, and thanks to its ability to bind water it is added to baked goods and frozen desserts, giving them smoothness and increased volume.
