A gelling agent extracted from the peel of citrus fruits and subsequently modified to provide specific properties. This is a slow-setting pectin specifically tailored for gelling media rich in sugars (Brix level greater than 70) and acids (pH less than 3.5). The resulting gel has a relatively firm texture and is not thermoreversible.
Recommended Dosage: 1 – 2.5%
