It has a dark reddish-brown color and a thicker, harder bark, which is used in both whole and ground forms. Cinnamon Cassia has a more pronounced flavor and aroma compared to Ceylon cinnamon.

    The earthy-woody yet sweet flavor of Cinnamon Cassia is well-suited for rice pudding, compote, and pie. It also harmonizes very well with all kinds of dried fruit. A delightful dish where it shines is sweet couscous with dried fruit, apples, cinnamon, and lemon juice, or grandma's apricot dumplings sprinkled with cinnamon sugar. A pinch of cinnamon powder perfumes chocolate drinks and coffee.
